La
Revue
du Vin de France
Classification of the best French wines. 2007 Edition.
The Guide’ s classification
....................2004
Vintage....................
The Domaine is now at the height of its know-how: the range of Premiers Crus and Grands Crus is remarkably diverse, the accuracy of vinification has never reached such summits.
We stand here in the presence of a few of the purest and most expressive Chablis wines. If you cannot access the Raveneau and Dauvissant that are almost impossible to find, console yourself with these fine expressions of Chablis, you will have no regrets!
The
Wines:
Our enthusiasm for this Estate’s wines is not dimmed with this 2004 Millésime, rather the contrary. From the delicious, appealing generic CHABLIS to the immense Grand Cru Les CLOS, not forgetting MONT de MILIEU Vieille Vigne which has the class of a Grand Cru, the entire range is high flying. Bravo.

Chablis Premier Cru - we very much liked
Chablis Premier Cru Mont de Milieu 2002
" Long, rich, powerful, a wine for ageing. "
Chablis Premier Cru Les Vaillons 2002
" It is the opposite of the Mont de Milieu, with a fat and a richness that will make it more accessible.
"
Chablis Grand Cru Les Preuses 2002

" The elegance prevails in this light wine, floral, endowed with a beautiful matter and of which the long final
suggests a happy
ageing. "

....................2000
Vintage....................
" It
is only at the bottom of the range of the Estate's wines and
yet it has everything to please, highly elegant in the
mouth and a dazzling finale of white fruit and peach.
”
Chablis
Cuvée Tête d'Or
" Is longer in the
mouth and is more mineral ".
Chablis Premier Cru
MONTÉE
de TONNERRE
" The white
flowers give great class to this elegant, long wine, its
mineral tones are well asserted transcending above
superb, most concentrated matter. With its pleasing nut
bouquet Mont de Milieu is very close, as is Fourchaume which
displays more generosity ".
Chablis Grand Cru Les
BLANCHOTS
" This
wine is in an imposing oacked phase, but its magnificent
mineral matter penetrates throught the partition to
assert its charm and fullness ".
Chablis Grand Cru Les
CLOS
( )
" As in 1999 this half-bodied Clos is
cloaked in mineral, unusual elegance for this soil which
produces rather more massive wines ". |
|
Chablis
Grand Cru Les PREUSES

"
Incredible
elegance is the characteristic of this fine wine with its
delicate hints ofhoneysuckle and white peach. A masterly
success ".
Chablis Grand
Cru VAUDÉSIR
" Though
its nose may have a subtle start,
it is full-bodied in the
mouth with magnificent ripeness of fruit.

The grand 1994 and 1995
Burgundies
“ Where to turn if you are not
a regular client of the Burgundy producers whose wines
conjure up flights of fancy? Consult this guide to quality
Domaines that have yet been bought up by keen amateurs,
marvels await you.”
Domaine BILLAUD-SIMON
" This remarkable
Estate combines technical skill with the desire to give
expression to the soil. A prestigious range of Chablis
Premiers and Grands Crus can be round, with long keeping,
very mineral with a light touch ".

"Chablis: changing of the guard"
"The Grand Cru les Blanchots
1991 Vieille vigne by
Billaud-Simon (helas! produced in supremely confidentiel
quantiry) showed astonishing fullness of structure for this
vintage exhibiting all th nobility of its soil with his
incredible aroma both lactic and tainted with mushroom".

and others".
Domaine BILLAUD-SIMON
"CHABLIS Premier Cru: This Estate
continues its climb to the sunimit with three marvellous
vatfuls, Les
Vaillons,
Mont
de Milieu and Montée
de Tonnerre,
perfectly hallmarked with model freshness and clarity. The
latter is perhaps the finest offering this year".
CHABLIS Grand Cru Les
CLOS:
" Mineral and approaching honey, remarkable body, a wine to
keep (wait at least six years)."
