Right
from the start, Chablis wavers between its status of
burgundian wine, therefore playing with the strength, and
its soil made of kimmeridgian limestone which privileges the
delicacy. This ancestral debate is round again in the
european Grand Jury tasting. In its diversity, this does not
mean disparity as we saw it, some wine tasters like elegant
wines, some of them making the difference. Concerning the
wine taster that is opposite to the others, he shows his
exclusive attraction towards complex wines such as
Raveneau's Valmur or the strictness of Billaud-Simon's Clos.
Can we blame it ? As they are not numerous in this case,
this explains the bad but comparative classification of
these two famous wines ».
