La
Revue du Vin de France
Classification of the best French wines. 2007 Edition.
The Guide’ s classification
....................2004
Vintage....................
The Domaine is now at the height of its know-how: the range of Premiers Crus and Grands Crus is remarkably diverse, the accuracy of vinification has never reached such summits.
We stand here in the presence of a few of the purest and most expressive Chablis wines. If you cannot access the Raveneau and Dauvissant that are almost impossible to find, console yourself with these fine expressions of Chablis, you will have no regrets!
The
Wines:
Our enthusiasm for this Estate’s wines is not dimmed with this 2004 Millésime, rather the contrary. From the delicious, appealing generic CHABLIS to the immense Grand Cru Les CLOS, not forgetting MONT de MILIEU Vieille Vigne which has the class of a Grand Cru, the entire range is high flying. Bravo.

Domaine
BILLAUD-SIMON. This up-to date and excellent Domaine is today run by Bernard
Billaud-SIMON, jean’s son, and his nephew, Samuel. Most of the wines are vinified and masure in stainless steel. Two of the prestige cuvées, the Chablis Tête d’Or and the Mont de Milieu, Vieilles Vignes, are partly vinified in 3-5-year-old wood. The Blanchots is entièreté vinified in
oak. High classes wines here. My favourite is the Clos.
Chablis
Premier Cru Montée de Tonnerre 2004

Chablis Premier Cru Les Vaillons

CHABLIS GRAND CRU LES CLOS
2004
The best of the estate’s three grands crus. Has all the austérity of Chablis, but the splendid peaucier richess of a grand cru. From 2008.
Best value CHABLIS

A classic peaucier exemple with good depth and
acidity. A very good wine. From 2006.
