Appearance: Rich golden cloak with green reflection, brilliant and clear. 
                     The appearance of youth.

Palate: A candid attack with perfectly good balance between mellowness and acidity; this is a dense, slender wine  with elegant classy structure. The long finish of its youth, lemony with pink grapefruit,  blends with riper aromas.

The Nose: Its richness is first expressed by flattering honey, soon giving way to notes of green and mineral. The highly diversified palette of aromas is complex with ripeness of fruit intermingling honey with toast, lemon with vanilla. The vegetative notes are lively, menthol, lime, citrus.. the mineral truly present is iodine, crustacean. 

Wine/food harmony: Pike in crayfish bisque – Fillet of John Dory with chervil butter - Cassolette-baked creamed cheeks of monkfish  – Quail terrine – Fromage frais and matured cheeses -  Wild peach salad and pistachio brioche – Lemon meringue pastry..

Serving temperature:
10 to 12° as an aperitif
13 to 14° to accompany fine food

depending upon vintage. Tasting of this wine was conducted on the Estate. Storage at 10° in wine cellar and tasting at 12° - 
N°2 "Les Impitoyables" wine tasting glass.
