" This wine expresses a nose very lively, living way to citrus fruit, a touch of honey and flavours of white flowers. In Mouth, it leans on complex and pleasant aroma, and in spite  of its youth has a real aromatic character. Thus the Mont de Milieu obtained from 70 years  old vines, presents itself and will gain to soften few years before shining to a high level. "

" When I tasted it, it was very similar to Vaudésir, showing real perceptible difference, a final on the peach and exotic fruit. These distinct characters will not emphasized before one or two years in bottle which will allow the local tatse to express easier for the amateur. "

" The estate Billaud-Simon is owner of numerous vineyard in each appellation of Chablis, but it is mainly specialized in Chablis Premier Cru and in Chablis Grand Cru. The Billaud-Simon style is marked with precision and vividness but also with tonicity. The latest technical innovations come close to a deep respect of traditions, then the Chablis, the Premiers Crus and the Grands Crus are the nearest than they are meant to be: the most lively and precise Chardonnays we can find on earth. Notice that all of the Billaud-Simon' s production is vinified in stainless steel tank in order to keep the initial purity of the wine. Only the Cuvée Chablis Premier Cru vieille vigne and Chablis Grand Cru Les Blanchots are vinified in oak barrels. At the Nose, the Mont de Milieu develops subtle, very thin and intensely pleasant flavours, calling up toasted bread and white flowers. In Mouth, it is at first very lively before leaving us to a underlying complexity of great richness, sprinkling flowers and dried fruit in the palate. The final is long and of high level. This wine is a great success. To be left to two years in order to reach the summit of its aromatic expression. "

Chablis Grand Cru Vaudésir 2000

" The Nose is very light and lively. In Mouth, it develops light citrus fruit, very slowly ends with a beautiful persistence. It shows that this wine is still closed and needs to be left few years  to express totally which is important. Then, it will deserve a higher estimation. "
