" Bernard and Samuel
Billaud have brought this traditional Estate to the highest
level of the Chablis appellation. The Estate has vines in
the best Premiers and Grands Crus soil which imposes duties
worthy of this privilege: ultra-modern, rational vats vinify
the wine with fine precision maintaining all the clarity and
freshness that is expected. Two limited productions on
old
vines Blanchots and
Mont
de Milieu are
raised in wood and set
themselves a little apart from the
usual character of the Estate, absolute purity and agility
but will evidently gain flesh and roundness.The latest
vintages are all an equal success ".

CLASSIFICATION of France's wines and Estates By
Bettane&Desseauve
This Estate of long-standing tradition has been able
to rediscover the youth and energy that were lacking ten
years ago through its new generations, Bemard Billaud and
his nephew Samuel. The all-stainless steel tanks are
spectacularly clean and give almost absolute control over
vinification. Tests continue however in wooden casks,
particularly rewarding for the vatful
Blanchots
vieilles vignes
and
Mont
de Milieu.
The Estate owns land
on the best soil and presently offers a homogeneous range of
fresh, elegant wines, less acid than in the past, typical of their origins and made for long keeping.
